Plus Shanghainese food shares many characteristics with Zhe cuisine. When huangjiu is young, the flavor is strong and sweet, so most bottles designed for drinking are aged for at least a year before heading to market – the longer it ages, the better.ĭishes that contain Shaoxing huangjiu are easy to find in the Shanghai region, thanks to its proximity to the city (it’s less than an hour and a half away by bullet train). Huadiao is another famous type of huangjiu from Shaoxing, named not for the medium-sweet wine inside, but for the elaborate patterns carved into the jars in which it is aged. Semi-sweet shanniang uses already-fermented yuanhong in place of water to start its brewing process. Jiafan translates as “add rice,” and that’s exactly what happens when brewers add more glutinous grains in the secondary fermentation to encourage more sugar in this slightly sweeter version. With only 15 grams of sugar or less per liter, yuanhong is the basic block upon which all the other varieties of huangjiu are built. Traditionally in Shaoxing, new parents will buy a jar of this huangjiu and bury it when their child is born, to be dug up to celebrate achievements in the child’s life, like getting married or graduating from school. ![]() Yuanhong – or “Champion’s Red” – is named for the earthenware jars that the wine is aged in. The drink tops out at around 20 percent alcohol, since it is fermented, not distilled, and the most common varieties are yuanhong, jiafan and shanniang, ordered from least amount of sugar to most. Selecting huangjiu means picking your desired level of sweetness. The Traditional Chinese Medicine (TCM) benefits of the drink are legion, and include “invigorating the blood.” TCM practitioners recommend pairing Shaoxing huangjiu, considered a “warming” drink, with “cooling” foods like hairy crab or cold chicken to keep your qi in balance. The most famous variety hails from Shaoxing in Zhejiang province, originally due to the pure water of Mirror Lake that was used to make the huangjiu. The product of all that fermentation is a sherry-like amber liquid that is used in Chinese cooking or served as a drink paired with Chinese foods. The wine is made from fermenting glutinous rice with wheat or rice qu, a cake of mashed grains that cultivate yeast both convert the starch to sugar then to alcohol. Annual production starts in eastern China’s Shaoxing region in the tenth lunar month – the temperature and humidity at that time of year create the best environment for making the wine – with sacrifices to Du Kang. Legend has it that huangjiu, or yellow wine, was invented by Du Kang, the god of Chinese alcohol. ![]()

![]() ![]() “I spent a long time wanting that card,” says Zach. Charizard had always been his favorite Pokémon, and that card was in high demand when he was a kid, making it hard to come by. One of the most notable items in his collection is his original Charizard card. I realized that I owned some very valuable things!” I started getting a little uncomfortable with how valuable this stuff was, and I would wonder where my cards were and if they were safe. I realized that if I sold just one stack of cards I had for that game, I could make $40,000 or $50,000. There was a moment when the prices of those cards started going crazy. “I had spent around $800 buying booster boxes for the Flesh and Blood TCG. A card that got printed two years ago for a newer card game, The Flesh and Blood TCG, is currently selling for more than $10,000.” Zach had always viewed himself as more of a player than a collector, but as the value of his treasured cards began to rise, he had a realization. “This affected every collectible card game that’s out there,” shares Zach. When the COVID-19 pandemic hit, trading card games experienced a surge in popularity, with Pokémon taking center stage. He even went back to complete early sets from the Pokémon TCG. This included games like the original Star Wars CCG, the Middle-earth CCG. Around 2016, he began adding new games to his collection – ones that he had always been interested in, but never had a chance to acquire. Throughout the past 25 years, Zach has played various trading card games, and he protected them and kept them in good condition. Zach’s uncle, who owned an arcade game room and sold baseball and comic book cards, took them out to purchase more packs of cards, and a new passion was born. The brothers stayed up all night playing with the cards, and the next day they were begging to buy more packs. “Each card had artwork and information about the Pokémon characters we loved.” “It was a whole new world to be introduced to!” shares Zach. One Christmas, when he was about 9 years old, his mother gifted him and his brother starter sets for the Pokémon Trading Card Game. Zach Bunn’s interest in Pokémon cards began in the 90s when Pokémon first appeared on the scene. ![]() ![]() The Deadliest Catch has some of its original cast missing because they died. ![]() ![]() However early Sony PS3 machines do recognize this format and will play it back as will all Sony Vaio computers and any standard PC with Windows Media Player 10/11 upgraded to the DSD plug-in. However, since the physical copyright protection data of a standard SACD cannot be imposed to a conventional computer DVD drive, such burnt discs won't play back on standard SACD players. There is no proof that the producer used a bona fide DSD recorder.ĭSD files may be burnt to DVD media as standard UDF (universal disk format) files and Sony released a specification to support this. Just don't insinuate the same about their actual production process. Thus the only thing you know for sure about most SACDs is that they are distributed in the DSD format. This represents a very practical way to maintain a work flow within the processing facilities most record companies are used to. Next most systems that claim DSD compatibility actually transcode DSD to high-resolution PCM (24/96 or 24/192), perform all signal processing at that resolution, then convert the result back to DSD. ![]() Hence most of it is by now out of production. The extent of installed recording equipment able to process DSD data directly is rather limited due to Sony's policies. Processing native DSD still isn't easy today despite the recent fashion renewal for audiophile DSD streamers. ![]() Due to a very conservative commercial policy from Sony, SACD production has remained an esoteric niche market and a disc without that physical copyright-protection data is not playable on current standard SACD players. Copyright-protection data is embedded as a physical modulation of the width of the data stream ‘pits’ and only licensed SACD production plants have the necessary technology to encode this data. The Super Audio CD (SACD) uses this data format for high-resolution stereo and (if provided) multi-channel tracks whilst often also including standard Redbook stereo audio on a separate physical disc layer (the so-called hybrid disc which accounts for most commercial releases). When this standard DSD rate was still argued to be insufficient for professional use, a doubled rate of 5.6448MHz was added for the most advanced monitoring recorders such as Korg units. DSD-Direct Stream Digital-is a generic pulse-density modulation data format which uses one bit at a very high sample rate. Even though DSD should be no perfect stranger to most audiophiles, it's still useful to issue a reminder of what it is precisely. That would be some technical achievement and eliminate another barrier between the recording studio and our listening rooms. Does this mean one can exceed the best of legacy SACD spinners with DSD streamers directly decoding native master recordings or high-quality remasters? This requires some specific upgrades within our conventional playback equipment and the number of D/A converters able to decode DSD is still limited but rapidly increasing. Fast broadband access and the direct connection of the recording industry with the Internet has introduced a second stage using native 1-bit DSD (Direct Stream Digital) files. Enabling it are downloads from a few websites as 24-bit FLAC or AIFF files at 96kHz or 192kHz sampling rates. Today h igh-resolution file playback is one of the most interesting ways to achieve first-class sonic performances at home. Review component retail in Europe: €5.980 Ĭontext.
